Nom Nom Paleo - Kalua Pork


If you’re reading this post chances are you already own and love your Instant Pot but just in case you’re new to the game, here’s the low-down.  The Instant Pot is anywhere between a 6-in-1 to an 11-in-1 multi-cooker depending on which model you purchase.  The preferred use is probably the pressure cooker function but we’ve used it as a slow cooker, warmer, sauté pan, and rice cooker.  It’s truly a game-changer for the busy human because it makes cooking your favorite dishes faster and more convenient.  How great to have shredded beef tacos on the table in an hour.  We’ve gathered up some of our very favorite recipes from some of our very favorite bloggers and influencers, in fact many of them have been guests on our podcast.  Most of these are in our monthly if not weekly meal repertoire so check them out and give a couple recipes a try.



Shredded Red Curry Chicken (Whole30) by Natalie Perry of Perry’s Plate

Kalua Pig (Shredded Pork) by Michelle Tam of Nom Nom Paleo

Michelle of Nom Nom Paleo is an Instant Pot goddess!  She has an ever expanding list of incredible recipes and this Kalua Pig is one of them.  The flavor is incredible and it’s a versatile dish; serve wrapped in cabbage, on a salad, or in a tortilla.  Yum!

Shredded Chicken Tacos & Celery Root Tortillas by Carmen Sturdy of Every Last Bite

This shredded chicken recipe is perfection and once you’ve tried it, will quickly become a staple in your life.  If you’re watching your carb intake these celery root tortillas are a fantastic alternative to lettuce wraps.  We spoke with Carmen on our podcast, she shares about her autoimmune diagnosis and how that changed her life, listen here.

Mac & Cheese by Lindsay Ostrom of Pinch of Yum

This mac & cheese is next level good!  It may seem strange to lug out a pressure cooker for mac and cheese but there’s something about pressure cooking the noodles in water and butter.  Just try it, you won’t regret it.  We interviewed Lindsay’s husband Bjork on our podcast (listen here) and loved hearing how they’ve grown Pinch of Yum and Food Blogger Pro.

This beef is tender, moist, and packed with big flavor.  It’s the perfect family weeknight meal and can be used not only for tacos but on salads, quesadillas, burritos and more.  You probably can tell by now that we’re obsessed with tacos but can you blame us?  Give it a try and enjoy!

Authentic Instant Pot Chicken Pho by Mike & Steph Le of I Am A Food Blog

We’ve long been fans of anything Mike and Steph put out.  Steph got started cooking her way through Momofuku’s entire cookbook while Mike photographed.  Their food is surprisingly simple to make and absolutely delicious.  This specific recipe is truly authentic and bursting with flavor.  Give it a try, we LOVE it!
