I’ll admit, with the exception of a classic pumpkin pie on Thanksgiving, I used to think the whole fall pumpkin craze was a corporate ploy to get us to consume, well… more. I went year after year, season after season gleefully avoiding the pitfalls of the pumpkin spiced this or the pumpkin glazed that. That was UNTIL this year. I was visiting my aunt and uncle in Dallas recently and they took me to their new favorite breakfast hot spot. I ordered my standard American breakfast of choice and enjoyed our conversation as the meal was being prepared in the kitchen. Before long our lovely server was delivering our plates and that’s when I got the first whiff and look at my aunts pumpkin pancakes. I quickly found myself face to face with the very thing I had successfully avoided all these years. After just one bite “yada, yada, yada”, what can I say, I’m now singing a different tune. While I still feel the corporate push of seasonal ingredients is still a bit much, I guess its safe to say the only one who was truly missing out was me. After my conversion pumpkin pancake moment, I’ve now enjoyed a pumpkin muffin and a few delicious bites of a sweet potato pumpkin pie already this season. I can assure you there will be a few more before the year is out because I’m heavily eyeing just about everything on this list.
