We aren’t afraid to admit that we’re a little obsessed with french fries.  While a zucchini is never going to be a potato, you’d be amazed at how deliciously satisfying a zucchini fry can be.  They deliver on crunch, taste, and the feeling you’re indulging in junk food.   We are so grateful to Michelle of The Whole Smiths for graciously sharing her grain-free zucchini fries recipe with all of us.  If you haven’t ever tried a homemade zucchini stick,  you’re in for a real treat.  Pair them with her zesty ranch and you’re in business.  Michelle was also a guest on our podcast where she tells all about her life before blogging, how she got started, and her recently published Whole30-endorsed cookbook.  It was an absolute joy hearing her story so listen in here and be inspired for new and delicious healthy home cooking.


We are all about a good zucchini fry around here.  This recipe absolutely delivers on ease, taste, texture, and lightness.  Michelle has used Algae oil for frying which has a higher smoke point (485F) than traditional canola or peanut.  Most importantly however, Algae oil is extremely heart healthy with a higher fatty acid count than olive oil!  The name is a little off-putting and conjures up ideas of fishy tasting food but actually, it’s extremely mild tasting like a vegetable oil.  It’s definitely worth a try as it won’t leave you feeling heavy and greasy.

Grain Free Zucchini Fries

Grain Free Zucchini Fries


    Zesty Ranch
  1. 1 Cup homemade mayo (recipe link above)
  2. 1/4 Cup cilantro
  3. 3 Tbsp almond milk
  4. 1 Tbsp chives
  5. 1 clove garlic
  6. 1/2 tsp salt
  7. 1/4 tsp onion powder
  8. 1/4 tsp onion granules
  9. 1/4 tsp. garlic powder
  10. 1/4 tsp. chili powder
  11. 1/2 jalapeno deseeded
  12. Dash of red pepper flakes (more if desired)
  1. 2 large zucchinis cut into spears
  2. 1 egg, beaten
  3. 1/2 C. almond flour
  4. 2 Tbsp. tapioca flour
  5. 1/2 tsp salt
  6. 1/4 tsp. pepper
  7. 1/4 tsp dry mustard powder
  8. 1/4 tsp chili powder
  9. Thrive Culinary Algae Oil
  10. Salt to taste


    Zesty Ranch:
  • Blend together mayonnaise, chives, garlic, salt, onion powder, onion granules, garlic powder, chili powder, cilantro, jalapeño, red pepper, and almond milk
  • Pulse to combine for desired consistency
  • Combine almond and tapioca flours, dry mustard, salt, pepper and chili powder
  • In a large dutch oven or frying pan add 1 inch of algae oil
  • Heat on medium high until oil reaches 350F
  • One by one, dip zucchini spears into beaten egg, let excess drip off
  • Dip in flour mixture and toss to coat
  • Add prepared zucchinis to hot oil without crowding the pan.
  • Fry 2-3 minutes per side until golden brown
  • Continue this process for remaining zucchini spears
  • Once cooked, remove and place on paper towel to drain
  • Salt to taste and serve with ranch
