We’re pretty sure we can all agree that tacos are NEVER a bad idea. They are quick, easy, perfect for finishing up leftovers, and never disappoint on flavor. For a fun vegan option, we are featuring harissa-baked cauliflower tacos from Sweet Paul Magazine Blog. We recently interviewed Paul (listen here) and absolutely loved hearing his story. He shares about his creative beginnings growing up in Norway. While his parents were busy at work, Paul spent most of his days with his grandmother and great aunt. They baked, crafted, sewed, and took him antique shopping. This foundation was the introduction for his life’s work. Are you familiar with harissa? It’s a mix of spices from the Middle East and North Africa. Picture warm flavors like chili peppers, garlic, caraway, coriander, mint, cumin, etc. all ground together and mixed with olive oil to form a delicious paste. You can find ready-made pastes or powdered versions (just add oil to make a paste) in stores. Spread it all over cauliflower florets and roast until crispy and caramelized. Pile it high on a tortilla of your choosing and enjoy (spring for Siete grain-free tortillas if you’re staying away from Gluten and grains). These tacos are delicious with crispy shredded lettuce, tomatoes, onions, and creamy feta cheese. They come together super quickly and are packed with spicy intense flavors.
