Biscuits are a revered food in many places. Chefs and home cooks alike argue over the perfect flour and exact proportions of ingredients. Controversy aside, one thing everyone agrees on is that biscuit dough prefers to be mixed by hand and made with love. If you’ve chosen a grain-free or ketogenic lifestyle, you know that bread items like biscuits are typically not available. If you’re lucky enough to find a recipe, they usually pale in comparison to their gluteney counterpart in both texture and flavor. Not the case anymore. We are grateful to Kyndra of the popular keto food blog Peace, Love, & Low Carb for sharing her low carb biscuit recipe with us below. She is one of the original keto bloggers and is passionate about creating delicious recipes with simple ingredients found in any store. Furthermore, she’s an international best-selling cookbook author. We recently interviewed Kyndra on our podcast (listen here) and enjoyed her authenticity about her lifelong struggle with her weight and how it ultimately led her to a keto lifestyle. We were inspired by her strength and positivity for life. Listen in and enjoy getting to know Kyndra.
Do you remember those buttery cheesy biscuits they serve at Red Lobster? These remind us of those minus the grain and gluten. They are just as cheesy and delicious but very low in carbohydrates. In this recipe, Kyndra adds bacon and jalapeño but if that’s not your thing, you could substitute to your heart’s content. We like the idea of trying chives, spinach, or sun-dried tomatoes. You could even experiment with different cheeses like feta or gouda or goat. These biscuits deliver on taste and texture and will be a new family favorite.
