You may already be aware of the many benefits of oatmeal but just in case you need a refresher, here are a few highlights.  First, oats are the number one source of resistant starch.  They digest very slowly suppressing the appetite and increasing the metabolism.  Next, they are efficient at lowering bad cholesterol and rich in iron and antioxidants.  Oats are high in soluble fiber that help to absorb water and prevent constipation.  Finally, by soaking oats overnight you’ll absorb more nutrients in the final product.

Have you experimented with overnight oatmeal yet?  It’s just about the easiest thing in the world.  Simply mix the oats with water or a milk of your choice the night before and that’s it.  It’s a perfect solution for mornings when you’re in a hurry.  Carrie’s recipe calls for steel but oats which are slightly less processed than rolled oats.  Also, this recipe can easily be made vegan by using a plant-based milk.  For all the nutrition and recipe details, head over to Carrie’s site Walder Wellness.  Enjoy!

Strawberry Vanilla Overnight Oats


    Overnight oatmeal:
  1. 1 Cup steel cut oats
  2. 1/4 Cup chia seeds
  3. 2 Cups unsweetened milk of choice
  4. 1/2 tsp ground cinnamon
  5. 1/2 tsp vanilla extract
    Optional Toppings:
  1. 2 Cups fresh strawberries (sliced)
  2. 4 Tbsp nut butter
  3. fresh mint
  4. nuts
  5. plain greek yogurt
  6. drizzle maple syrup


  • In a mixing bowl, stir steel cut oats, chia seeds, and ground cinnamon
  • Add milk and vanilla extract and whisk ingredients together
  • Keep mixture in bowl or for individual servings, separated into 4 glass jars with toppings
  • Cover and keep in the fridge overnight
  • Final product can be kept in the fridge up to 5 days!
