You may already be aware of the many benefits of oatmeal but just in case you need a refresher, here are a few highlights. First, oats are the number one source of resistant starch. They digest very slowly suppressing the appetite and increasing the metabolism. Next, they are efficient at lowering bad cholesterol and rich in iron and antioxidants. Oats are high in soluble fiber that help to absorb water and prevent constipation. Finally, by soaking oats overnight you’ll absorb more nutrients in the final product.
Have you experimented with overnight oatmeal yet? It’s just about the easiest thing in the world. Simply mix the oats with water or a milk of your choice the night before and that’s it. It’s a perfect solution for mornings when you’re in a hurry. Carrie’s recipe calls for steel but oats which are slightly less processed than rolled oats.
