Is there anything more satisfying or sugar-balancing than a nice warm bowl of oatmeal to start the day?  Top it with mixed berries, toasted nuts, dried fruit, nut butters, or chocolate chips and enjoy.  We are grateful to Carrie Walder of the blog Walder Wellness for sharing her overnight oats recipe with us below.  We recently spoke with her on our podcast (listen here) and enjoyed hearing her story.  She is a registered dietician passionate about clarifying the misinformation on nutrition, promoting healthy lifestyle change, and helping others foster positive relationships with food.  Her website and Instagram accounts are packed with recipe ideas and everyday meal inspiration to help you easily incorporate more whole foods into your lifestyle.

You may already be aware of the many benefits of oatmeal but just in case you need a refresher, here are a few highlights.  First, oats are the number one source of resistant starch.  They digest very slowly suppressing the appetite and increasing the metabolism.  Next, they are efficient at lowering bad cholesterol and rich in iron and antioxidants.  Oats are high in soluble fiber that help to absorb water and prevent constipation.  Finally, by soaking oats overnight you’ll absorb more nutrients in the final product.

Have you experimented with overnight oatmeal yet?  It’s just about the easiest thing in the world.  Simply mix the oats with water or a milk of your choice the night before and that’s it.  It’s a perfect solution for mornings when you’re in a hurry.  Carrie’s recipe calls for steel but oats which are slightly less processed than rolled oats.  Also, this recipe can easily be made vegan by using a plant-based milk.  For all the nutrition and recipe details, head over to Carrie’s site Walder Wellness.  Enjoy!
