the perfect fish taco by Gaby


Most of us have our go-to foods that can satisfy our most intense cravings.  For us, tacos hit every note pretty much any day of the week.  Simply put, tacos are our comfort food.  It always seems like tacos are made with love, heart, and soul.  From authentic street tacos like carne asada and tacos al pastor to pork carnitas and even a good old cheese quesadilla topped with ranchero salsa – they ALL fill our bucket.  But, our all-time favorite, especially in the warmer months, are fish tacos.  There is something about the crispy fish, tangy slaw, dribble of cream and squeeze of lime, all wrapped up in a corn tortilla that we simply cannot get enough of.



Perfect Fish Tacos

Gaby Dalkin, a cool quintessential California girl, was an earlier guest on our podcast and we loved our chat (listen here).  Gaby knows her flavors and every recipe she puts out is mouth-watering.  Her fish tacos are no exception.  They are light, packed with flavor and easy to make. Best of all, Gaby has a life-changing slaw that will rock your world.


In this recipe, Gaby’s slaw is Curtido, a lightly fermented cabbage relish that is typical in Salvadoran cuisine.  Curtido is usually made with cabbage, onions, oregano and lime juice.  To compare, it resembles sauerkraut or kimchi, obviously with different flavor profiles.  Gaby adds an extra punch by adding vinegar and brown sugar.  Curtido is typically served alongside Pupusas, which are the national dish of El Salvador and always filled with something savory, such as beans, beef, cheese or pork.  Pupusas are akin to arepas (Venezuela) or gorditas (Mexico).  Salivating yet?  The curtido is best when made ahead, giving the flavors proper time to marinate. Add your favorite salsa and guacamole and you’re in business.  You will be thanking Gaby all summer long.

  • 1 pound cod fish
  • olive for for drizzling
  • kosher salt and pepper
  • 1/2 teaspoon red pepper flakes
  • 1 lime
  • 1 orange
  • 8-10 corn tortillas, warmed
  • 1 recipe Guacamole
  • 1 recipe Chipotle Salsa


For the Curtido

  • 1/3 head green cabbage, shredded
  • 1/3 head red cabbage, shredded
  • 1 large carrot, grated
  • 1/2 yellow onion, thinly sliced
  • 1/2 cup apple cider vinegar or red wine vinegar
  • 1/4 cup water
  • 1/2 teaspoon salt
  • 1/2 teaspoon brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes
