We are in the thick of the winter season with cold and cloudy days abounding.  If you live in the deep north with snow and shorter daylight, you know how difficult it is to fight the desire to hibernate while hanging on to any motivation – cabin fever anyone?  Some of the greatest yet simplest advice for success is making the decision to fully embrace the season.  Get your winter gear on and head outside for a walk, put on some music and start an impromptu dance party, or try a new seasonal recipe.

We are grateful to Lex Daddio of Restoring Radiance for sharing her warm and yummy white chicken chili recipe with us below.  We recently interviewed Lex on our podcast (listen here) and loved hearing all about how she overcame a serious binge eating disorder, the process of starting a food blog, and how becoming a new mom has transformed her world.



It seems there is an abundance of classic tomato-based chili recipes out there but it’s harder to find the ‘white’ variety.  This one is super simple and equally as delicious.  Lex’s recipe calls for pulled rotisserie chicken but if you’re vegetarian, simply omit it.  Our favorite part of this chili is the creamy texture that’s achieved without using dairy.  Lex does this by blending half of the cannellini beans and a little broth together before adding the other ingredients: genius.  Top your bowl with fresh cilantro and enjoy it with tortilla chips.

White Chicken Chili

White Chicken Chili


  1. 2 sweet onions
  2. 1 jalapeño pepper
  3. 8-oz canned green chilis
  4. 4 garlic cloves, peeled
  5. 32-oz chicken broth
  6. 1 rotisserie chicken, shredded
  7. 2 cans cannellini beans (after rinsed & drained, take 1 cup of beans and blend with a little of the chicken broth to create a creamy blend)
  8. 1 Tbsp cumin
  9. 1 Tbsp lime
  10. 1 tsp oregano
  11. 1 tsp sea salt (more to taste)
  12. 1 tsp black pepper
  13. 1/2 tsp red chili flakes
  14. 1/3 cup cilantro


  • In a medium-large pot, sauté onions, jalapeño, and green chilis in olive oil until softened (~7 min)
  • Add chopped garlic & sauté for a couple more minutes
  • Add the chicken, chicken broth, cannellini beans (both whole & blended) lime juice, & all the spices Simmer for about 10 min
  • Add cilantro & season to your liking
  • Let cool and enjoy
  • Topping favorites: cheese, cilantro, tortilla chips
