We officially enter Spring this week and I don’t know about you but our bodies are craving lite and refreshing foods.  It’s been a long and rough winter for some of us and we’re in need of some serious defrosting and mood-lifting vitamin D.  So, whether the sun is shining or not, make yourself a plate of this simple citrus salad to nourish and refresh.  Melissa of The Faux Martha was kind enough to share it with us and tell her story on our podcast (listen here).  She lives with great intention and a level of thoughtfulness that deeply inspires.  Additionally, she has recently published her first book The Minimalist Kitchen; a cookbook but also, a framework for creating a minimalist kitchen.  Her principles for adopting minimalism into the everyday home are practical and impelling.  Make sure to listen in and get to know Melissa.

Melissa writes: “this is a salad to feed your people”.  We are mesmerized by the gorgeous contrast of vibrant citrus fruits against creamy white yogurt.  Can’t you envision quickly whipping this up with care and serving alongside a piping cup of freshly brewed coffee?  What a sweet little gift for your partner, kids (not the coffee), friends, or neighbors.  We’ve never heard of mixing toasted seeds into thickened honey as a topping but we’re definitely loving it and stashing it away for many more appearances!  For all the recipe details and even a tutorial video on how to segment oranges, check out Melissa’s website The Faux Martha.  Here are a few other recipes that may interest you.
