Lettuce-wrapped burgers seem to be all the rage these days because duh…they are delicious.  But, what about when you’re craving something a little lighter or are trying to find ways to incorporate more fish into your family’s diet?  This grain-free crusted filet is just the thing you’re looking for.  All the ingredients are clean and the recipe is quite simple.  The toughest part is probably getting the right temperature on the oil so the filets don’t burn.  The finished product is so delicious and you may even convince your little ones to gobble it up.

It’s probably fairly important to use cod here because of how well it holds up to coating and frying but feel free to experiment with your favorite piece of sturdy fish.  Teri tops her filets with 3 of her Magic Elixirs; the marinated onions (delicious and so easy), refrigerator pickles, and her tarragon tartar sauce.  They are all fantastic and definitely worth giving a try if you have the extra time on your hands.  Her marinated onions have gone viral and for a good reason; they add beautiful complexity and rich flavor to nearly every meal.  To read Teri’s entire post and explore her delicious recipes, visit her site here.  You’re sure to learn something new and exciting in the kitchen.

Whole30 Fish Filets


  1. 4 filets of cod (~6-oz each)
  2. 2 Cups almond meal (processed in food processor until it’s super fine)
  3. 2 eggs (beaten)
  4. 1 Tbsp smoked paprika
  5. 1 Tbsp granulated garlic
  6. ½ tsp freshly ground black pepper
  7. ¼ tsp salt
  8. 1 Tbsp clarified butter
  9. 1 Tbsp extra-virgin olive oil
  10. Lettuce for wrapping (Bibb, Red Leaf, Iceberg...)
  1. No Crumbs Left Refrigerator Pickles MAGIC ELIXIRS™
  2. No Crumbs Left Marinated Red Onions MAGIC ELIXIRS™
  3. No Crumbs Left Tarragon Tartar Sauce MAGIC ELIXIRS™


  • Season the fish filets well on each side with salt
  • In a mixing bowl, combine the fine almond meal, smoked paprika and granulated garlic together
  • In a separate mixing bowl, beat the eggs very well
  • Dip each filet gently in the egg, then remove and drop into the almond meal to cover thoroughly
  • Take care not to mix the egg with the almond mixture (Teri uses her right hand for the egg and left for the almond meal)
  • Melt the ghee in a large sauté pan over medium heat
  • Add the olive oil to the pan and mix together to combine and reduce the heat to medium low
  • Sauté each cod filet in the pan for 3 minutes per side, until golden brown
  • Serve wrapped in lettuce with Teri's Refrigerator Pickles, Marinated Onions, and Tarragon Tartar Sauce MAGIC ELIXIRS™.
