Lettuce-wrapped burgers seem to be all the rage these days because duh…they are delicious. But, what about when you’re craving something a little lighter or are trying to find ways to incorporate more fish into your family’s diet? This grain-free crusted filet is just the thing you’re looking for. All the ingredients are clean and the recipe is quite simple. The toughest part is probably getting the right temperature on the oil so the filets don’t burn. The finished product is so delicious and you may even convince your little ones to gobble it up.
It’s probably fairly important to use cod here because of how well it holds up to coating and frying but feel free to experiment with your favorite piece of sturdy fish. Teri tops her filets with 3 of her Magic Elixirs; the marinated onions (delicious and so easy), refrigerator pickles, and her tarragon tartar sauce. They are all fantastic and definitely worth giving a try if you have the extra time on your hands.
