We are constantly on the lookout for meal ideas and recipes that are flavor-packed and nutritionally dense.  As you all know, part of feeling fuller longer and keeping feelings of deprivation at bay are making sure you have plenty of these recipes in your arsenal ready to go.  Kelsey from Little Bits Of has created an incredible orange meatball recipe that needs to be part of your weekly rotation.  Kelsey was also a guest on our podcast, so check out her episode here.

Orange Chicken Meatballs

These meatballs are completely Paleo and Whole30 compliant.  This recipe is one of Kelsey’s absolute favorites.  She buys her ground chicken from Trader Joes and serves these meatballs over their cauliflower fried rice; easy peasy.  This recipe is packed with all sorts of yummy flavors like ginger, garlic, green onion, etc.  Be warned that ground chicken is much more delicate and moist, than ground turkey.  For this reason you should definitely purchase a scooper if you don’t have one and scoop them onto a cookie sheet rather than rolling them in your hands.  Otherwise you’ll have a mess on your hands!  If you prefer a sweeter sauce, add 1 date and blend it all up in a blender.  Also, you definitely need to add coconut aminos from Thrive Market to this recipe, you won’t regret it!! Ok folks, get cooking, these are healthy and delicious.

Whole30 Orange Chicken Meatballs

  1. 1 lb ground chicken
  2. 1 Tbls toasted sesame oil
  3. ¼ cup finely chopped green beans
  4. ¼ cup shredded carrots
  5. ¼ cup shredded cabbage, roughly chopped
  6. 1 egg
  7. 1/4 cup almond flour
  8. 1 Tbls coconut flour
  9. 2 tsp garlic powder
  10. 1 tsp ground ginger
  11. 1 tsp salt
  12. 1/2 tsp pepper
    Orange Sauce
  1. 1 cup orange juice
  2. 1/2 cup coconut aminos
  3. 1/4 cup apple cider vinegar
  4. 1/2 tsp garlic powder
  5. 1/2 tsp ground ginger
  6. 1 pitted date, soaked in hot water to soften
  7. 2 tsp arrowroot powder mixed with 2 Tbls cold water

  • Preheat oven to 400 degrees
  • Place a small skillet over medium high heat and add in sesame oil
  • Add carrots, green beans and cabbage and cook until softened (3 mins)
  • Remove from heat and set aside
  • In a medium bowl combine ground chicken, egg, almond meal, coconut flour, garlic powder, ground ginger, salt and pepper.
  • Add the veggie mixture and combine
  • Line a baking sheet with parchment paper and scoop chicken into balls on the sheet (use scoop for this)
  • Bake for about 18 minutes or until cooked through
  • While meatballs are in the oven, combine orange juice, apple cider vinegar, coconut aminos, garlic powder, ground ginger and the date in a blender and blend on high until the date breaks down
  • Powder the sauce mixture into a medium skillet over medium high heat and bring to a boil.
  • Once boiling, add in arrowroot & water mixture while whisking vigorously to thicken sauce
  • Lower heat
  • Serve meatballs over cauliflower rice
  • I used bags of pre shredded carrots and cabbage!
  • If you want to eliminate a step and make it less sweet you can remove the date from the recipe and add all sauce ingredients straight into the pan instead of blending!
